Patacones Night

 

We hear you.. We feel you… we understand you!!

Taco Night can take a quick pause and let's talk about Patacones Night instead.

We all have that craving of some salty, crunchy and all so yummy tacos BUT this IS the next best thing… PATACONESSSSS!

It’s fun and easy to enjoy. 

You can top them with just about anything you like. I like to put shredded chicken or beef, guac (not even a question), beans, queso and anything you name it!


Having a party? → make plenty... They’ll be gone quick!

Or just you? → better off, more for you!


The best part is it only takes 30 minutes to make and you can pair it off with the delicious and already made to perfection Lulu Salted Tostones → also known as Patacones (now you know):

To begin, start making your shredded chicken:


Ingredients:

  • 2 chicken breasts, cooked
  • 2 Tbsp vegetable oil
  • ¼ cup chopped scallions
  • 1 cup fresh tomatoes, chopped
  • 1 clove garlic, minced
  • 1 tsp ground cumin
  • ¼ tsp salt
  • ¼ tsp ground pepper

 

Add everything to a mixing bowl and use a fork to start pulling apart the chicken and mix everything together → make it fun and put on your favorite salsa playlist while you're at it!

Move on to creating a yummy avocado spread:

 

  • 2 avocados
  • 1 Tbsp lime juice
  • ¼ tsp salt
  • ½ cup mozzarella cheese, shredded
  • 2 Tbsp fresh cilantro, chopp

 

Once this is done → Grab a bag of Lulu Salted Tostones and begin with the avocado spread, spread it on each patacon evenly, add the shredded chicken, top it off with cheese and cilantro and 

V O I L A!
